Posted By: Devon Marshall on June 11, 2009 Daily Bite: Mango Wedges Wrapped in Serrano Ham with Cheese INGREDIENTS: 1 teaspoon kosher salt 1 teaspoon paprika 1 teaspoon cracked black pepper 3 trim mangoes, peeled and cut into wedges 10 very thin slices of serrano ham or prosciutto 1/2 pound piece of Manchego cheese, curled with a vegetable peeler PREPARATION: Combine salt, paprika, and cracked black pepper. Mix well and sprinkle lightly on mango wedges. Wrap a ham slice around each wedge. Arrange the wedges on a platter and garnish with Manchego curls. Makes 6 servings.
